I have dry scalp type dandruff...?

I have very nice long, curly red hair and it looks great when I don't wash it for a couple of days and let the curls lock up nice and tight. The problem is I have dry scalp type dandruff and it is very embarring when a girl is admiring and touching my hair and also the flakes falling from it. I use head and shoulders shampoo for dry scalp and it works but only if I use it everyday, I don't like to wash/comb it everyday because it looks like a puffy afro and never gets a chance to lock up. It seems that my scalp refuses to produce any type of oil and likes to shed dead skin cells and make me itch, does anyone know any remedies that could help dry scalp type dandruff besides washing it everyday (washing everyday isn't good for hair anyways). Only reply if you know what you're talking about please, no wanna-be know-it-alls.
